Peanut Sauce

One of my tried-and-true recipes! This sauce is versatile. Check out some ideas below the recipe card.
Peanut Sauce Pairings:
Spring/Summer Rolls - Make your own roll ups using spring roll wrappers (follow instructions on back), big leaf lettuce, collard greens, or rainbow chard. Fill with veggies/herbs of choice (shredded carrots, cucumber, celery, avocado, cabbage, Thai basil or mint). Optional: shrimp and or tofu.
Thai Tacos - Use large leaf lettuce, such as romaine or butter leaf to make taco "boats" and or organic corn shells. Fill up with grilled shrimp, chicken, and or tofu (alt. – pan-sear chopped tofu coated in organic corn starch... I love it this way!). Optional: sautéed onions, peppers, and mushrooms / plain or vinegar-based slaw (I like to use red wine vinegar & EVOO). Drizzle peanut sauce on top.

Slaw/Salad - Great side dish. You can purchase plain slaw in store or make at home (a food processor is helpful, but not needed). Options (base): shredded cabbage, carrots, broccoli stems, celery (shredded or chopped). Other add-ins: add tomatoes, avocado, bell pepper, peanuts, cilantro, apple, cucumber, etc. Option to add oil & vinegar.

Air-fried or pan-seared tofu with peanut sauce. If air-frying, add some avocado and or sesame oil + fresh lime juice (optional). If pan-searing, follow note above.
Snack - Serve with celery, apple slices, cucumber, pretzels, etc. Great way to use leftover sauce (if there is any 😉).
